>> South Korea is spawning a plan for the future of food. Slipping a healthy and eco-friendly protein source into everyday dishes, insects. So that gag of disgust you may have just had, Seoul wants to break down that barrier, funding restaurants and food labs. As Reuters Jane Chung reports, it's all about subtlety.
>> A first necessary step is presenting insects in a way that's pleasing to all senses. So the idea is invisibly serving insects by incorporating them into regular foods like pasta and cookies, in a powder or a liquid form instead of serving whole insects.>> The U.N. says almost a third of the world already eats insects and as a food of the future, meal worms support levels of omega-three and six fatty acids closer to fish than beef and pork.
Koreans may be a little more open to the idea than some, silk worm larva is already a popular street snack available in any grocery store. It's a not just health that official are thinking about but also the economy.>> The Korean government has got a more to foster edible instant business as new growth engine and a food source of the future.
It is premature to say Koreans would replace conventional meat with eatable bugs. Nevertheless, they could find an alternative source of protein as consumer perception towards insects as food is improving.>> A big selling point to Korean farmers, insects require far less land and water than cattle. Right now edible bugs are mostly reared for animal feed.
But if Seoul has it's way, some barnyards may get a lot quieter, until all you hear are crickets.
